Our chef, Joe Friday has become a household name within Toronto’s culinary scene. Creating show stopping meals that taken your taste buds on a prolemaic culinary adventure at ViaVai. Raised in Okinawa, Japan, formally trained in French Cuisine at the Culinary Institute of America, later apprenticing in Norway and England; Chef Joe Friday found his pivotal moment while working at the world renown Nobu Wakiki, Honolulu. There he found his identity as a chef. Forming a bond to Honolulu, he furthered his career and established himself as the sous-chef at the Hilton Hawaii Village and shortly after became the Executive Chef at Giovani’s.
They say its easy to fall in love with Hawaiian food and culture while on the island. Luckily for all of us this rings true with Chef Joe Friday. Thankfully he decided to bring a little piece of Hawaii back to everyone here in Toronto.
